Delicate, white, star-shaped jasmine flowers fill the air with an exotic and intoxicating aroma. The evergreen shrub, Jasminium officinalis or Jasminium grandiflorum, features shiny green leaves and can grow up to twenty to thirty feet tall. Native to China, India, and Iran, jasmine is cultivated in China, India, Mediterranean countries, and northern Africa. Harvested by hand at night, the flowers are labor-intensive to produce, requiring around 1,000 pounds of blossoms to yield just one pound of jasmine essence. Known as jasmine absolute or enfleurage, this thick, mahogany-coloured oil has a rich, warm, floral scent with tealike undertones, often referred to as the "king of essential oils.
