Thyme
Overview
Thyme (Thymus vulgaris) is a small evergreen shrub known for its fragrant foliage and tiny pink, lilac, or white flowers. This aromatic herb, native to Spain and the Mediterranean, is now widely cultivated in regions such as Algeria, France, China, and the United States. Thyme oil is steam-distilled from the leaves and flowering tops of the plant. Red thyme oil, the first distillation, has a warm, intense aroma, while further refining produces white thyme oil, which is milder and less irritating. Spain remains the top producer of this versatile oil.
